Situation
A historic luxury hotel engaged Paul to replace an existing restaurant with a new Coastal Italian concept — while keeping the current outlet fully operational through the transition.
The brief was larger than a menu. The hotel needed a defined culinary identity, the right leadership structure, a realistic operating model and coordination across restaurant, bar, in-room dining and banquets.
The principal risk was the one most hotel openings underestimate: a concept that drifts broad while the culinary team stays absorbed in running a restaurant scheduled to close.
Engagement
Paul built a culinary framework drawn from the coasts and islands of Southern Italy, translated through local seafood and regional ingredients. It set the restaurant's flavor language, its menu architecture, and the criteria by which every dish would be judged.
The scope covered:
Culinary concept and regional positioning
Executive chef recruitment and onboarding
Menu architecture and R&D direction
A recipe-development pipeline sized to the opening
Pizza and fresh-pasta program planning
Equipment selection and production-flow review
Ingredient sourcing and purchasing strategy
Staffing structure and leadership responsibilities
Integration with hotel bars and in-room dining
Opening timeline, training priorities and operational controls
One structural decision shaped the rest: approximately 80% of the opening chef's time was protected for research, recipe development, sourcing, staffing and training. Daily responsibility for the existing restaurant moved to the sous-chef level, with the executive chef holding oversight and stepping in only on escalation.
Result
The project moved from a broad idea to a defined culinary and operating framework. The team established an R&D process designed to develop 40 to 45 dishes and select the strongest 16 to 22 for opening.
Pizza, pasta, equipment and leadership programs were aligned to the restaurant's expected volume and its obligations to the hotel. The opening chef gained protected development time; the existing operation gained clear daily accountability.
Paul continues to advise ownership and culinary leadership through menu evaluation, operational planning and pre-opening execution toward the 2027 opening.
